¡Ea! wine is in Denomination of Origin ‘La Mancha', which is the largest vineyard area in Europe, around 165000 Ha.
La Mancha' is a perfect region to grow vines. The yield is not too high, especially in old vines. In addition there are lots of sunny hours in the vineyard so the ripeness processes are really good and the health of the vines is excellent.
Some of the autocthonous varieties are Airén and Cencibel, we work both and Bobal, another autocthonous variety in the East of Spain.
The excellent sanitary and ripeness conditions in ‘La Mancha' became this area in ‘a golden area' to work in a high quality-price ratio.
To elaborate ¡Ea! wine, we choose the oldest vines we have found in the region, from 40 to 70 years old, and just in cencibel variety.
The vineyards soils are lime and clay soils. These loose soils are poor in nutrients and formed with pebbles, which affords good drainage, so the roots are deep and these conditions confer freshness to the wine. The vineyards are between 700 and 750 m above the see level, in different villages like Las Pedroñeras, Las Mesas, El Provencio, San Clemente and Villarrobledo.
These old vines are worked in a traditional viticulture, almost organic because of the excellent conditions of this area, and yields are low, about 15 Hl/Ha.
We always choose healthy, ripe and equilibrated grapes. A great raw material which confer its personality and its character to our wine ¡Ea!
Each plot is harvested and wine-made separately, with authoctonous yeast to preserve its identity. The vinification is based on the respect to the great raw material.
